What happens is that during sleep the muscles around the mouth can relax too much, causing the air passage to become constricted. This results in less airflow, and for some it can even cause snoring (because the strange mouth positioning causes the palate to vibrate while air flows through). If the air passage becomes too constricted, the brain wakes up your body to move your mouth back where it should be so that you can continue to breathe properly.
